Why I Love This Southern Instant Pot Chicken and Rice Casserole I mean, isn’t a casserole the ultimate comfort food? Southern style casseroles have always held a special place in my heart, especially when they are creamy, delicious, and full of flavor. There was always a smattering of casseroles on the plastic tablecloth-lined tables that spanned the church’s fellowship hall, along with fried chicken, macaroni and cheese, southern style green beans, potato salad, and more. Garnish with green onions, and serve with rice or noodles! Enjoy! Turn off your Foodi, and let it stand for an additional 3-5 minutes to continue thickening. Add the corn starch slurry to the orange chicken and stir slowly for 2-3 minutes, or until the mixture has thickened. Then, in a small bowl, whisk together the corn starch and water to make a slurry. Allow the Foodi to naturally release pressure for 10 minutes before turning the nozzle to ‘vent’ and carefully releasing the rest of the pressure. Set Foodi to ‘pressure’ on high for 5 minutes. Put the pressure cooking lid on your Foodi, secure and lock it, and turn the nozzle to ‘seal’. Once you’ve removed any stuck-on bits from your pot, add the rest of the sauce ingredients and stir well until everything is evenly dispersed. Just keep in mind that metal will scratch your Foodi pot, so wood or silicone utensils work best! Use a wooden spoon to scrape off any stuck-on bits on the bottom of the pot. Even if you don’t have any stuck-on bits on the bottom to scrape off, it still helps to add a little liquid so that nothing sticks while you’re adding the rest of the sauce ingredients. Once the chicken is no longer pink, add 2 tbsp of the orange juice to the pot to deglaze it. You’ll need to move the chicken around pretty much constantly to prevent it from sticking to the bottom of the pot. Once it’s heated, add the vegetable oil and chicken and saute for 3-5 minutes, or until your chicken is no longer pink. To start, set your Foodi to ‘saute’ on medium heat.
